Noodology is my favorite spot for beef noodle soup in Irvine! I used to frequent A&J as my primary spot for beef noodle soup until I gave Noodology a shot earlier this year. Not sure why I never tried it out when I lived a couple minutes away.. BUT ever since, I've come regularly when I'm craving a hearty noodle soup. They have a variety of different preparations of beef noodle soup from different regions of China which is gives you over 10 variations with unique flavor profiles.

I'm not the biggest fan of spice (I'm weak) so my go-to order is the Cantonese Beef Noodle Soup. It's fairly mild and doesn't have a strong kick or numbing spice like some of the other noodles do. The broth has a depth of strong, beefy flavor without being too fatty or oily. The noodles are thin and bouncy, perfect for picking up the flavorful broth. I love the addition of peanuts in the dish as it provides a contrast in texture to the soft noodles and braised beef.

When I want to man up for some spice, I usually get the Chengdu Braised Beef Noodle Soup which has a stronger kick that is still tolerable for someone that doesn't handle spicy super well. I'd also recommend the noodle soup with Chinese pickle, it usually comes with a large portion of Chinese pickle and gives it a very unique savory and sour flavor.

Parking in this plaza can get crowded during peak hours since it's pretty small. The interior isn't big, but they get bowls out to customers fairly quickly so the line doesn't get too backed up. (Remember to check-in on Yelp!) The service is pretty quick and I've never had any issues on that front.

Overall, I've become a big fan of Noodology and I'd recommend it to anyone that wants a taste of a classic Chinese dish!

Went here for early dinner on a weekday with a party of 2. We were immediately seated and the service was fast to get us settled in.
My friend and I both got a soup bowl. Both of which were delicious albeit strong, but that may be normal since this is my first time ever trying this sort of dish. We also ordered cold plates to go with the food which helped mask the intensity of soup. The portions were huge as well. One bowl could've easily been shared between 2 people. The food itself besides being strong was delicious! It came out hot and fresh and looked even better than the pictures! It was just too intense for me, but again that may be due to me not being used to these kind of dishes.
Overall the soup was great and I would likely go again! Would probably share a bowl next time though

Great authentic style noodles, one of the best places in OC!

I have been here a couple times and both times I've had amazing food. They have over ten different noodle dishes that include flavors from various regions of China. Many of them feature the classic southern numbing spiciness, which is very unique and sometimes requires an acquired taste. If you haven't tried the numbing dishes before, they are definitely worth a shot. Who knows, maybe you'll fall in love with it! The portions at Noodology are quite large so don't worry about that. One bowl was plenty for me and I usually eat a lot!

The first time I went, I ordered the Huaxi Beef Rice Noodle and it was amazing. This one had a numbing flavor, but it was also not very spicy. It is definitely a unique flavor when there is numbing but no spiciness. It's hard to explain the flavor with words, just try it out for yourself! The second time I ordered the Non-spicy Mushroom, Chicken & Corn with Chicken Broth and it was excellent. This one didn't have any numbing flavor and the chicken was great. If you're looking for something that isn't spicy and not numbing, this dish is for you!

Overall, it was a great experience and I would recommend trying any of the menu items! I was only disappointed that they didn't accept Apple Pay nor American Express.

Came in around 3 pm to avoid the crowds we always see around here on weekend nights!

Our server was very patient with us and walked us through our ordering process. Ordered a passion fruit tea, fried egg, popcorn chicken, braised beef brisket noodles and non spicy mushroom chicken & corn with chicken soup.

Portion sizes for the noodles are huge! My brisket noodles were delicious. So much flavor! The noodles were on point and the brisket was nice and soft! The chicken soup was perfect for the sick husband! Just what the doctor ordered the rice noodles are so "QQ" bouncy and chewy!

Came here for dinner on a wed night. It was a really hot night 85 at 7pm so I wasn't expecting to wait for a table. Luckily we were only 3 back. We were seated quickly. They have split air Ac units in each of their dining rooms so you can enjoy the hot soup on a hot day.

I ordered the number 6 beef rice noodle with pickled pepper, which the hottest dish on the menu.  The dish comes in a overwhelming bowl of broth and noodles. Digging in the broth is nice and spicy with very rich flavor. The rice noodles practically melt in your mouth but do not tear when you pick them up. Perfect. Loads of bok Choi are in the dish. I did wish they did cut the stalks or leaves up but that I guess that for the sake of presentation and ease of making the dish.

We also ordered the duck wings. They bring you plastic gloves to help eat them with, which is a nice touch. They come cold so be aware when ordering. Although there is not much meet on these they do provide a good portion size to make up for it.

Service is quick and attentive, they have a buzzer on the table to call a server. Price is about $10-$15 per person. Overall a great place to go for dinner or lunch.
